Limited and special. Novello olive oil is a once a year opportunity to taste oil fresh from the press, unfiltered like fresh-squeezed olives. This type of oil is thick, like an olive “gravy” and is a flavor on its own for dipping, on bruschetta, bean purees, and for pinzimonio.
